The name of the city in the hills around Delphi, the legendary home of the ancient Greek oracles, the Amfissa olivesolives are oval with fine elastic skin. This variety has the distinctive characteristic of giving table olives in color from leaf green to midnight black and every possible shade between them. This can be achieved by changing the time of harvest. They can be treated in different ways, always giving a soft fruity taste. Olives are harvested when the fruits are close to full ripeness, between late October and the first days of February. Naturally treated with salt, they acquire a black / brown color.
