Rustic beans with vegetables
Necessary products:
- 500 g table beans "Fiorre"
- 2 onions
- 2 carrots
- 2 peppers
- 1 stalk celery
- 50 ml oil
- 1 cube butter
- 3 sprigs of mint
- 1 tbsp tomato paste
- 1 cup tomato juice
- paprika
- a pinch of black pepper
- salt
- 1 tbsp flour
Method of preparation:
Soak the beans overnight. Put it in a saucepan with fresh water and boil it. Strain the cooked beans and discard the water. Finely chop the vegetables. Fry them in hot oil. Add the butter to them and stir. After frying, add the tomato puree, tomato juice and mint along with the black pepper. Stir. Add beans to the vegetables. Dissolve the red pepper and flour in a little water to mix. Add to the beans and stir in the stuffing. Salt the dish, pour a little warm water to cover the products. Transfer everything to a baking tray or casserole. Bake at 200 degrees for 40 minutes.
