Fruit salad with quinoa
Ingredients:
- 1 cup boiled quinoa Fiorre
- 1 cup fresh blueberries
- 8 -10 pcs. fresh strawberries cut into cubes
Citrus dressing:
- 1/4 tsp extra virgin olive oil
- 2 tablespoons rice vinegar
- 3 tablespoons orange juice
- 3 tablespoons lime juice
- 2 tsp Dijon mustard
- 1 tbsp honey
Method of preparation:
In a large bowl, mix the cooked quinoa, blueberries and diced strawberries. Stir well. In a small bowl or blender, add oil, vinegar, orange and lime juice, honey and mustard. Beat or mash until mixed. Pour the dressing and stir again. For best results, cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow the flavors to blend.
