Amfissa Blond
The name of the city in the hills around Delphi, the legendary home of the ancient Greek oracles, the Amphis olives are oval with fine elastic skin. This variety has the distinctive characteristic of giving table olives in color from leaf green to midnight black and every possible shade between them. This can be achieved by changing the time of harvest. They can be treated in different ways, always giving a soft fruity taste. Amphissa Blond olives are harvested from October to about mid-November. Naturally treated with salt, they acquire a blond color.
